Hollandaise sauce

Ingredients

  • 2 large egg yolks

  • 1 1/2 teaspoons lemon juice, more as needed

  • 1/8 teaspoon kosher salt

  • 1/8 teaspoon white pepper

  • 4 ounces (1/2 cup) room temperature unsalted butter, cut into 8 pieces

  • 1 1/2 teaspoons of water

 

Step 1

Add the yolks, lemon, salt, and pepper to a glass bowl (heat resistant) and away from the heat. Whisk until smooth and slightly thicken.

Step 2

Place the bowl over a slightly simmering water pot. Keep whisking for some seconds until the mixture is warm. Start adding a cube of butter, one at a time, waiting for each to be fully incorporated.

Step 3

Remove pan from heat once all butter is in. Check for salt, pepper, lemon, etc. Add the teaspoons of water to make it less thick.
